Raising the Hardy Boys

Hippy haystacksOur first Meatless Monday was a painless tweak to one of Matt's favorite childhood meals, Haystacks. Matt dubbed the greener version "Hippy Haystacks."

He claims there is a right way to make them but I think any way you pile on these yummy ingredients will make a tasty dinner. I promise it tastes better than my picture looks.

To make your own Hippy Haystacks at home you need:

cooked brown rice, black (or refried) beans (cooked on the stove top), cheese, cabbage, salsa, guacamole and olives if you don't hate them.

Matt's directions:

You put the rice on the bottom and you layer it with the black beans on top of the rice, then you go with the cheese (so the bottom layers melt the cheese a little bit) then you put the cabbage, salsa, guacamole on top of the cabbage.

P.S. The original base for Haystacks was Fritos and chili.
